Truffles: either you love them or hate them! There's really nothing in-between. Italian truffles, particularly the white truffles, are considered extra special due to their extreme rarity, intense flavor profile with earthy, garlicky notes, and the difficulty in harvesting them, making them a highly prized culinary delicacy with a hefty price tag! White Italian truffles are often described as the "king of all truffles" and are only available for a short time period each year, further adding to their seduction. 

My husband Michael and I have to go to Italy at least once each year for our work here at SALTOPIA. I know what you're thinking, "Poor you! Tough life having to travel to Italy to source Italian truffles! Boo Hoo!" I only can agree with this partially because each shipment bears a heavy burden of fear for the dark side of the truffle industry. We have to purchase our truffles in cash, which means bringing a large sum of money to the exchange point. Imagine the thief who is aware of the meeting place for the trade? Not only will this potential heist yield an enormous sum of cash, but then there's also the raw truffles! It's a scary and therefore hiring trustworthy armed guards is a must. The dark underworld of the truffle trade industry has fallen victim to many crimes including murder. 

We source both our black and white Italian truffles directly from Italy, unlike many so-called “truffle salts” sold in the USA today. Most “truffle salts” are made from cloned truffles that are grown in plastic barrels. They really don’t taste like truffles nor have any value whatsoever. Shoppers here in the USA don’t even realize what they are purchasing because the cloned, barrel truffles are sold everywhere these days - completely infiltrating the market. SALTOPIA is one of the very few companies selling the real deal. Perhaps those other vendors don't want to possibly die at the trade point? We will always risk death for authentic truffles, I promise. If I die sourcing Italian truffles, then my headstone shall read: "RIP Gave Life for the Love of Italian Truffles." You're welcome! 

Truffle salts can be enjoyed across a huge variety of dishes and snack foods! Pasta, pizzas, beef, chicken, seafood, fries and popcorn are go to options if you love the authentic flavor of real Italian truffles.
