How long should you brine your turkey?

Brining your turkeys, chickens or meats is a super easy step that produces the juiciest and most tender flavors. This chart was created to help guide you through specific brine times for all different types of meats. Always brine your proteins by the pound but never worry if you over brine or allow the meat to soak in the brine solution for too long. As long as the meat is kept at a safe temperature in the refrigerator, it will be deliciously perfect regardless of leaving the turkey in the brine for a little bit longer than noted.

 

 

As noted within our Brine Timing Chart, just about any meats can be soaked in a brine solution including poultry, beef, lamb and pork. Meat brining is not meant to make the meats salty. Brining helps break down the proteins in the muscle fibers of the meat, which allows the meat to absorb the brine flavors and retain moisture during cooking.
