A great way to season shellfish is to use flavorful preparations like garlic butter, Cajun or seafood seasoning, or lemon-herb sauces, which complement its natural sweetness. The best method depends on how you plan to cook the shellfish, such as boiling, grilling, or sautéing. When boiling crab or shrimp add a generous amount of seasoning directly to the boiling water, along with lemon and salt. You can also keep the water simply seasoned with salt and serve the cooked shellfish with a flavorful dipping sauce, such as lemon-garlic butter. For grilling, baking, or pan-frying toss the shellfish with a robust flavor (paprika, garlic or smoked salts) and a little olive oil to coat before cooking.
