Meatloaf is a wonderful winter comfort food that somehow has received a bad reputation! Most folks think of meatloaf as a dry, flavorless loaf of meat. Here's a tip: add loads of flavor to it! Common meatloaf ingredients include ground meat, a binder such as eggs and breadcrumbs or oats, and flavorings like chopped onions, garlic, salt, pepper, and Worcestershire sauce. A classic glaze is typically made from ketchup, brown sugar, and mustard. We love to use ground beef, veal and pork. Adding chopped fruits such as apples, dried cranberries and raisins gives the meat wonderful texture as well as flavor. Cheeses then elevate meatloaf to a whole new level. Try gorgonzola to the apple and cranberry combination. Cheddar is a nice addition to a more Southwestern style meatloaf recipe.
